Devils Food Cake with Seafoam Frosting

Devils Food Cake

2 1/4 cups flour
1/2 cup unsweetened cocoa powder
1 1/2 teasoons baking soda
1 teaspoon salt
1/2 cup shortening
1 cup sugar
1 teasoon vanilla
3 egg yolks
1 1/3 cups cold water
3 egg whites
3/4 cup sugar

Grease 2 9x1-1/2 in round pans (mine are 8x1-1/2 and that worked). Stir together flour, cocoa powder, baking soda and salt. In large mixer bowl, beat the shortening on medium speed about 30 seconds. Add 1 C sugar and vanilla and beat till fluffy. Add egg yolks, one at a time, beating on medium speed for 1 minute after each. Add dry ingrediaents and water alternately to beaten mixture, beating on low speed after each addition till just combined.

Thoroughly wash the beaters. In small mixing bowl beat egg whites till soft peaks form. Gradually add the 3/4 C sugar, beating till stiff peaks form. Fold egg white mixture into batter. Combine well. Turn batter into prepared pans. Spread batter evenly. Bake 350 for 30 to 35 minutes or till cake tests done. Cool 10 minutes on wire racks. Remove from pands; cool thoroughly on racks. Frost with seafoam frosting, then drizzle with chocolate sauce (below)
1 square (1once) unsweetened chocolate
1/2 teaspoon shortening
Melt chocolate with the 1/2 teasoopn shortening to drizzle around the edge of frosted cake.


Seafoam Frosting
1 1/4 cups brown sugar
1/4 cup cold water
2 egg whites
2 teaspoons light corn syrup or 1/4 teaspoon cream of tartar
1 teaspoon vanilla
In the top of a double boiler combine sugar, cold water, egg whites, corm syrup or cream of tartar, and a dash of salt. Beat 30 seconds on low speed. Place over boiling water (upper pan should not touch water). Cook about 7 minutes while beating constantly on hight speed with electric mixer or till frosting forms stiff peaks. Remove from heat; add vanilla. Beat 2 to 3 minutes or till of spreading consistency. Frosts tops and sides of two 8 or 9 -inch layers or one 10-inch tube cake.
